His studies and chocolate and pastry work history in France are discussed, as well as his inspired move to the the US. Chef Vincent details his experiences in Las Vegas- his time working at some of the city’s top casino resorts, leading up to his current position of 8 years as Executive Pastry Chef at The Cosmopolitan of Las Vegas.
Chef Vincent has received a variety of accolades and recognition for his work, winning 1st place Gold Medals in the Food Network Challenge “Chocolate Series” 2005, 2006, 2008 and 2009. In 2007 Pilon took home the 1st place metal from US Chocolate Masters where he competed against the country’s top Chocolatiers. He was also named one of the “Ten Best Pastry Chefs in America” by Pastry Art & Design Magazine in 2007 and 2008, and has judged at The US Chocolate Masters as well as several Food Network Chocolate Challenges.

Patrick Honeywell has over 20 years of experience in the Food and Pastry Industry. Formerly served as Pastry Chef for Westin Hotels and Resorts where he assisted in new hotel openings and creating pastries and providing recipes for the cookbook, “Food and Wine the Westin Way.”

As Corporate Chef for Le Chef Wholesale, Patrick heads up the R&D and new product development departments, provides company product training, sales and marketing classes and seminars.

Patrick works closely with food industry experts- Las Vegas Casino Pastry Chefs, Hotel Chefs, European and American Consulting Chefs, Master Artisan bakers. Working together, sharing each others passion ideveloping new products and menus.
